After a morning with a couple of great meetings and tasks completed, it was time for some Fitness friendly foods in the shape of lunch.

Today is a day off from heavy workouts, therefore I will eat a high protein, moderate fat and low carb foods today.

After a brief look into the fridge (I don’t like to eat the same food for a week, so no pre-cooked boxes of food), I ended up with the best omelette I have eaten in some time!

The vegetables fried in coconut oil then 4 eggs whisked with some milk filled the pan up and then finished off in the oven at 180C for some minutes and until set.

– savoy cabbage
– broccoli
– baby leaf spinach

I also topped it with a chicken breast from yesterdays cooking which smashes a good 45 grams of protein on top!
